Nutty Granola

I know some people don’t give much regard to breakfast but for me, it is the meal I look forward to the most.  I love all breakfast foods but more often than not it is a crunchy muesli or granola that I crave the most.  I was recently reading Healthy Every Day by Pete Evans and I spotted his very healthy recipe for a breakfast granola called Chilli’s Muesli.  It had a few ingredients that I didn’t have in the pantry so I decided to substitute a few things for what I had on hand and the following recipe was the result  …  delicious!

80g almonds

80g macadamias

40g sunflower seeds

40g pumpkin seeds

1tbsp chia seeds or ground flax seeds

40 ml coconut oil

2 tsp cinnamon

vanilla extract

1/2 tsp ground ginger

pinch salt

honey to taste

6g shredded coconut

60g dried cranberries

Milk and Fresh berries to serve

Preheat oven to 160C.

Mix the almonds, macadamias, sunflower seeds and pumpkin seeds together in a bowl.  In a smaller bowl mix the coconut oil, cinnamon, vanilla, ginger, salt and honey. Add the wet ingredients to the dry ingredients and mix to coat all the nuts and seeds.  Spread mixture out on a baking tray covered with baking paper and roast in the oven for 10 minutes.  Check the mixture and give it a mix then place back in the oven until the mixture turns a lovely golden brown.  This may take 2-5 minutes depending on your oven.  You will just need to keep an eye on it to prevent burning.

When the mix is cool, add the cranberries, chia or flax seeds and coconut.  Keep in a sealed container and enjoy with fresh berries, milk and yoghurt.

    I still eat your tawny granola nearly every morning. Ava thinks it is THE ONLY thing we should eat for breakfast. Shall have to try this one!
