Macadamia Biccies

This is my all time favourite go-to biccie recipe.  I’ve tried what seems like hundreds of different ‘best ever’ recipes over the years but nothing stands up to the beautiful buttery shortness of this one.  So step away now if, like my husband your mouth seizes up when you eat shortbread, because this will not be the recipe for you!  However, if your mouth waters at the suggestion of short butteriness then you have come to the right place.

125g butter

3 tbsp icing sugar

1/2 tsp vanilla

1 cup Self Raising Flour

1/2 cup chopped macadamias

Preheat oven to 180C.

Cream butter and sugar, then add vanilla.  Fold in flour and macadamias then roll into walnut sized balls, place on a tray and press down lightly with the tines of a fork that has been dipped in flour to prevent sticking.

Bake for approximately 12 – 15 mins or until cooked through.
