For the past few days we have been blessed with beautiful weather – less like winter and more like a Tassie summer! All of these sunny days have led me to thinking about tropical fruit especially passionfruit so when I saw some fresh passionfruit at the grocery store yesterday, I couldn’t resist.
I decided to use my favourite biscuit recipe and add some custard powder to the basic mix and sandwich them together with a tangy passionfruit icing. I think the end result is delicious!
3 tbsp icing sugar
1/2 tsp vanilla
1 cup Self Raising Flour
1 tbsp custard powder
3/4 cup icing sugar
1tbsp softened butter
Preheat oven to 180C.
Cream butter and sugar, then add vanilla. Fold in flour and custard powder then roll into walnut sized balls, place on a tray and press down lightly with the tines of a fork that has been dipped in flour to prevent sticking.
Bake for approximately 12 – 15 mins or until cooked through.
When biscuits are cool, mix all icing ingredients together and spread on biscuits then sandwich two together. Store in an airtight container.
