Pikelets

The Americans can have their pancakes but we Aussies have pikelets!  I much prefer these small morsels which can be finished in 2 or 3 bites.  Great for morning tea – just smear with butter and jam and you are on your way – Enjoy!

2 cups SR flour

3 tbsp caster sugar

1 ½ cups milk

2 eggs

1 tsp vanilla paste

50g butter

Sift the flour and sugar together into a bowl.

Whisk the milk, eggs and vanilla together, then add to the dry ingredients, whisking until smooth.

Melt a little of the butter in a large non stick frypan over a medium heat. Drop tablespoons of batter into the pan. When the surface starts to bubble, flip them over. Remove once golden on both sides.

Serve with butter and jam, lemon juice and sugar or your favourite topping.  These keep well in the fridge for a few days.
